In my opinion, there is nothing more heavenly than eating freshly made pancakes first thing in the morning for breakfast. Trust me. You will feel the same after going through my keto banana pancake recipe, which I’m about to share with you all today. Once you make these pancakes that come out fluffy, thick, and soft, you will not follow any other recipe except this one. 

To add icing to the cake, each pancake contains only 5 net carbs. Although it does sound unbelievable, that’s the magic of these soft mouth-watering pancakes. Moreover, the recipe is quick and easy and requires ingredients that are used regularly in the kitchen.

Ingredients Required To Make Keto Banana Pancakes 

I’m pretty sure that you have most of the ingredients that we will be using for this recipe stocked up in your kitchen right now. But it’s always a good idea to check whether or not you have the correct quantity before diving in to make the pancakes.

Besides the everyday ingredients, the only unusual element needed for this recipe is banana extract which you may not have in your kitchen. But it is essential to make the pancakes; hence you can pick up some from your nearby supermarket. 

Here are the ingredients that you need:

2 Eggs

1 tablespoon Melted Salted Butter

1 ½ teaspoon Banana Extract

⅓ cup Sweetener

1 cup Blanched Almond flour 

1 teaspoon Baking Powder

Just under ½ cup Almond milk

Pinch of Salt 

Pinch of Cinnamon 

Process Of Making The Pancake Batter 

1.Take a medium-sized bowl and add all the liquid ingredients that, include: eggs, almond milk, banana extract, and melted butter. Combine the elements with a whisk until well mixed.

2. In the same bowl, pour in the dry ingredients that, include: baking powder, cinnamon, almond flour, sweetener, and salt. Whisk everything together until you get a thick, smooth batter.

3. Now, take a flat pan and coat it with baking spray. Make sure to get rid of any extra oil, as your pancakes will become soggy. Then place the pan on the  stove and keep the flame on medium-low 

Process To Cooking Your Banana Pancakes

1.When the pan heats up, pour in the mixed batter. The pancakes should be about 4 inches in size.

2. Cook the pancake for 5 minutes, making sure that the heat is low; otherwise, it may burn. 

3. When you see bubbles popping and forming at the center of the pancake, simply use a flat spatula and toss it over to cook for another couple of minutes.

4. Use your finger to feel the stiffness of the pancake. If it is firm, then take it off the pan.

5. Voila! Now you can add some syrup or any other topping and enjoy the fluffy keto banana pancakes.

6. With this batter, you can make about 5 pancakes using the same process.

Keto Flours That Can Be Used And Should Be Avoided 

As per the recipe, we’ll make keto banana pancakes using almond flour. But if by any chance you are allergic to almond flour, then sunflower seed flour or walnut flour can be used as substitutes. And the amount of this flour for the batter will be the same as almond flour.

However, by no means use coconut flour, which will cause the pancakes to crumble and dry out.

Storage And Reheating Process Of Your Keto Banana Pancakes

1.Refrigerator

If you have any leftover pancakes, then you can keep them in an airtight container and store them in the fridge for a maximum of three days. Before eating them, just put them in the microwave for about 10 seconds to treat yourself to some piping hot pancakes.

2. Freezer

In order to store the pancakes in the freezer, simply insert a piece of parchment paper between each pancake so that they do not stick to one another, and then keep them all in a freezer bag. Your pancakes will be edible for up to 3 months.

3. Reheating

If you want to reheat your frozen pancakes in the microwave, then keep them inside for 20 seconds or more until they are warm. Or you can always put your pancakes in the oven by putting them on a baking sheet and then covering them up with tin foil. It will take around 10 minutes at the temperature of 350°F to warm them up.

Are banana pancakes keto-friendly?

Unfortunately, no most banana pancakes are not keto-friendly as they include ingredients such as sugar, actual bananas, and white flour. And all of these are not at all beneficial for someone who wants to shred a few pounds.
That’s why in order to make our recipe keto-friendly, we have used banana extract and sweeteners.

How many carbs do banana pancakes have?

Usually, banana pancakes have a high amount of carbs, but our eco-friendly recipe only includes 5 carbs per pancake. So if you are making 5 pancakes, that’s a total of only 20 carbs. 

Can actual bananas be used to make keto-friendly pancakes?

No, absolutely not bananas contain high carbs and sugar which will prevent the pancakes from being keto friendly. Besides that, bananas will also make the batter thicker and ruin the shape and texture of the pancakes.
