Keto Banana Pudding Recipe: A Must Try Mouth-Watering Dessert with Low Carbs

Just because you are following a keto diet doesn’t mean that you have to live on fruits and greens. That’s why today I will be sharing my; wait for it! Yes, keto banana pudding recipe. Although it may sound hard to believe, you, too, can enjoy this delicious dessert in a healthy way by using the proper ingredients.

The traditional banana pudding consists of vanilla custard, banana slices, cake, whipped cream, and cookies, which are all a big no for us as the ingredients are full of sugar and carbs.

Ingredients Needed For The Keto Friendly Banana Pudding Recipe

1.Unsweetened almond milk- you can also use hemp milk which is nut free and a good keto option.

2. Butter- adding this ingredient will give your pudding a creamy texture. But if you want a dairy-free pudding, then you can eliminate the use of butter.

3. Heavy cream- although heavy cream is keto-friendly, you can always use canned coconut cream as a substitute if you want a dairy-free banana pudding.

4. Banana extract – since the taste of the banana extract may vary according to different brands. Hence I would advise you to pour a tiny quantity into your mixture at first and then adjust it according to your taste.

5. Xanthan gum- You don’t want a watery pudding that will never sit properly. To avoid that, you must use xanthan gum to acquire the proper thickness.

6. Sweetener- Add your preferred sweetener to the banana pudding. But I recommend using Monk fruit like stevia because it is very sweet in taste, and you would need a small amount to get the perfect sweetness for your pudding.

Process Of Making Keto Banana Pudding 

1. First, bring all the ingredients together and keep the eggs at room temperature.

2. Mix the sweetener, eggs, and xanthan gum together until they are correctly combined. Don’t just add a handful of xanthan gum to the bowl but sprinkle it inside the mixture bit by bit to avoid any lumps. Keep the mixture aside while going along with the next steps.

3. Take a saucepan and heat up unsweetened almond milk and heavy cream on medium flame.

4. Keep stirring continuously so the mixture doesn’t overflow or burn in the pan.

5. Take 2 tablespoons of the milk mixture and stir bit by bit into the bowl filled with egg mixture.

6. Now, the egg mixture is at the perfect temperature as the eggs will not end up being cooked in the hot milk.

7. As the temperature of the egg mixture is nice and warm, pour it inside the saucepan with the remaining milk.

8. Cook the mixture until it thickens and sticks to the back of the spoon. It should be done within 8 minutes. And if the mixture is not thick enough, add a little bit of xanthan gum.

9. Remove the saucepan from the cooker and add banana and vanilla extract along with fresh butter.

10. To make sure that the butter dissolves properly in the mixture, you must keep on stirring it. Check the flavor of the pudding, as more banana extract may be needed to get the appropriate taste.

11. So your keto banana pudding is ready to be poured into a wide bowl for it to cool down. Keep stirring every 10 minutes so that skin does not form on the top.

12. It will take approximately 30 minutes to cool down, after which you can cover with plastic wrap and keep it in the refrigerator for a minimum of 1 hour or until it is chilled.

The two easiest ways in which you can assemble this banana pudding are by: 

1. Layering the pudding in a transparent glass dish with crushed keto cookies and sugar-free whipped cream. By doing so, your pudding will look impressive and taste creamier.

2. You can divide the pudding into separate small serving cups, making it easier to serve people individually, especially at parties. And yes, don’t forget to add some crushed nuts and whipped cream on the top of each serving, along with a drizzle of caramel sauce, to get that extra flavor.

Top Tips To Make The Perfect Keto Banana Pudding 

Usually, when we try a dish for the first time, it is nowhere near perfect. Hence that’s why we have come up with a few tips that will help you to nail the ideal keto banana pudding at your first shot.

Tip 1: Whisk the egg mixture into the warm milk slowly and continuously. Because if you stop whisking, the eggs may start to cook inside the hot milk.

Tip 2: If you want your pudding to have a rich, creamy texture, then keep on stirring the egg and cream mixture.

Tip 3:  Ensure to cover the pudding with plastic wrap before storing it in the fridge so that no air can get inside it.

Tip 4: Chill the pudding for a minimum of one hour to allow it to set before serving.

Storage Instructions 

1.Fridge-  you can either store that banana pudding in a sealed jar or in a mixing bowl covered with plastic wrap. But ensure it is not left uncovered; otherwise, a layer may form on the top of the pudding. This dessert can be kept in the fridge for a maximum of three days.

2. Freezer- the pudding can be stored in the freezer inside small sealed containers for up to two weeks.

Always make sure to defrost overnight in the fridge before eating.

Is it a good idea to use real bananas for my keto banana pudding recipe?

No, you should not use real bananas for the banana pudding because it would mean adding heaps of sugar. The fruit is not at all keto-friendly as it contains a large number of carbs. Instead, you can use a good quality banana extract which will give you the exact same flavor as ripe bananas.

Is banana pudding keto?

No, the traditional banana pudding is not keto, as it includes sugar, banana slices, milk, cookies, and cornstarch which are all high in carbs and sugar.

How long does keto banana pudding last in the fridge?

The pudding is edible for up to 3 days if stored in the fridge properly.

Recipe Snippet 

Keto Banana Pudding

Ingredients 

1 ½ cup Unsweetened Almond Milk

2 large Egg Yolks 

2 large Eggs 

½ cup Heavy Cream or Coconut Cream (Canned)

6 tablespoons Crystal Sweetener

1 teaspoon Xanthan Gum 

½ teaspoon Vanilla Extract

2 tablespoons Butter 

1-2 teaspoons of Banana Extract 

1 batch of Keto Shortbread Cookies crumbled into little pieces 

2 cups Unsweetened Whipped Cream

Instructions 

1. Take a large mixing bowl and combine together whole eggs, egg yolks, sweetener, and xanthan gum. But when adding the gum, make sure that you sprinkle it on the top instead of just pouring it all at once, as it will cause lumps. Whisk all the ingredients together until you get a smooth texture.

2. Now get hold of a medium-sized saucepan, pour in the heavy cream and unsweetened almond milk, and heat it on medium flame. Keep stirring the mixture for 4 minutes to prevent overflowing in the saucepan.

3. Take the saucepan from the cooker and add one tablespoon of the hot milk o the egg mixture (step 1)and whisk well. Carry out the same process again and another tablespoon of milk into the egg mixture.

Make sure you follow this step carefully as the eggs come to a lukewarm temperature.

4. Your milk and egg mixture is now ready to be poured from the bowl into the saucepan. Keep the cooker on medium-low heat and stir the mixture making sure it doesn’t boil.

Cook the ingredients for up to 7 minutes until the mixture thickens and coats the back of a spoon.

5. If you want the mixture thicker, add an extra  ¼ teaspoon of xanthan gum. But do remember that when cooling down, the pudding will become thick in consistency even without adding gum.

6. Once the mixture is consistent, remove the heat and pour in banana and vanilla extract along with some fresh butter.

7. Now taste the pudding to check whether the sweetness and flavor are good enough for your taste buds. If you are a banana lover like me, then simply keep adding  ¼  teaspoon of banana extract at a time and keep stirring until you get the proper flavor. In my case, I usually need to add an extra ¾ teaspoon.

8. So your banana pudding is ready to be poured into a wide bowl for it to cool down. Do keep on stirring every 10 minutes so that skin does not form on the top.
