I have yet to try these with frozen bananas, but I’m sure it will work. Defrost them like you normally would, then drain any extra liquid and use the weight of the banana the recipe calls for.

These muffins are a great base for adding other ingredients, but I haven’t tried it yet. Along with the banana muffin, you could add some chopped nuts and spices.

You could also use blueberries instead of chocolate. If you’re using frozen berries, don’t let them thaw. To keep them from sinking, toss them in a little flour before adding them.

I also put raw sugar on the tops to give them a nice crunch. Both are optional, so if you want naked muffins, you can do what you want here.

Putting muffins in a jar with a lid and putting them in the fridge will last for up to a week. These banana muffins freeze well and will stay good for 2 months if you put them in containers or bags that can go in the freezer.

Ingredients:
Mashed Ripe Banana 2, medium size chocolate chips ½ cup, Almond Milk  ⅓ cup, Melted Coconut Oil ½ cup, Vanilla Extract 2 tablespoon, Brown Sugar ⅔ cup, Baking Soda ½ teaspoon, Salt ½ teaspoon, All-Purpose Flour ⅔ cup, ground flaxseed 1 teaspoon, ground cinnamon ½ teaspoon, ground ginger ½ teaspoon, ground cloves ½ teaspoon 

Instructions: Turn the oven on to 375°F. Put paper plates in a 12-cup muffin tin or lightly grease it with baking spray. Set aside.
Using the back of a large fork, mash the banana in a large mixing bowl until it is mostly smooth and only a few small lumps remain. Whisk in the vanilla and olive oil until they are mixed together.

Add the sugar and milk with a whisk. With a spoon, combine the flaxseed, spices, salt, and baking soda
Using a spatula, gently fold in about two-thirds of the chocolate chips until no flour lines remain. Make sure not to mix too much.

Divide the batter between the muffin cups with a medium cookie scoop. 

Most of them will be full. Put the rest of the chocolate chips on top.
Bake the muffins for 15–18 minutes, turning them once halfway through, until the tops are golden and slightly rounded and a cake tester stuck in the middle comes out mostly clean.

Take them out of the oven and let them cool for about 10 minutes in the muffin pan. Then, carefully take them out and let them cool completely on a baking rack.
