Ingredients You Need To Make Vegan Banana Muffins Chocolate Chip

These chocolate chip banana muffins are a cozy breakfast, afternoon snack, and dessert. Not only are they delicious, but they’re also packed with nutritious, flavorful pantry items I’m sure you have on hand right now. What you’ll need is as follows:

  • Banana

Two very ripe bananas will add a lot of wetness and sweetness. The more spots they have and the more ripe they are, the better your muffins will taste.

  • chocolate chips

I prefer small chocolate chips (which I sprinkle on top) and regular chocolate chips (which I swirl into the batter). You could replace the chocolate with chopped nuts if you like! (If you want a banana nut variation, walnuts would be my preference).

  • Coconut oil

This aids in keeping the batter nice and thick. Thick batter means delicious muffins! You can substitute vegan butter for coconut oil.

  • Vanilla:

For a sweet flavor boost, use the vanilla extract.

  • Brown Sugar:

It is a great taste that goes well with bananas and cinnamon. You could also use dark brown sugar, making the muffins darker.

  • Almond Milk

It is best to use unsweetened almond milk, but you can use any dairy-free milk.

  • Flax

Ground flaxseed is rich in fiber and omega-3 fatty acids and helps bind ingredients together instead of eggs.

  • Baking Soda:

This recipe relies entirely on baking soda for leavening.

  • Spices:

cinnamon, ginger, and cloves add warmth and flavor.

  • Salt:

Salt can enhance all the flavors of muffins

  • Flour:

These muffins are made with regular, all-purpose flour. For tender and fluffy centers, do not overmix.

  • First, peel the bananas and place them in a big mixing dish. Mash them up with a fork or a potato masher!
  • Add oil, brown sugar, and vanilla extract to the mashed banana. Mix everything.
  • The dry ingredients are added next. Add the flour first, without stirring. Sprinkle the flour with baking soda, cinnamon, and salt. This method ensures that the baking soda is uniformly distributed without requiring you to combine the dry ingredients in a separate basin.
  • Just stir the batter until it’s well combined — don’t overdo it! The batter must be quite thick.
  • Stir-ins are added last. I used walnuts and vegan chocolate chips, but you may use whatever you want or leave them out entirely.

  • Fill muffin cups halfway with batter. I like to top each one with a little brown sugar.
  • Vegan Banana Muffin batter in a muffin tray.

  • Allow your vegan banana muffins to cool before digging in!

Tips For Making Perfect Banana Muffins Chocolate Chip

Begin with exceptionally ripe, almost overripe bananas.

  • Please wait for your bananas to get soft, aromatic, and dotted all over or almost fully brown before using them to make the most intensely delicious, sweetest muffins. With a little patience, you’ll obtain the greatest banana flavor!
  • Carefully measure out the flour. I prefer to weigh my flour for the best results, but if you don’t have a kitchen scale, use the spooning and leveling method to measure your flour.
  • Avoid overmixing the batter. Fold the flour into the wet ingredients gently until just incorporated.
  • Overmixing may result in dense and harsh muffins rather than the fluffy and soft ones we want!
  • Divide the mixture among the muffin cups with a medium cookie scoop to make evenly sized muffins with less mess.

Best Banana For Banana Muffin

The best bananas to use for these Vegan Banana Chocolate Chip Muffins are ones that aren’t completely black. You want them to be a little hard because, unlike most banana muffin recipes, they call for chopped bananas instead of mashed ones.

If yours are completely black, that’s fine too; it will work with either. Refrain from mashing them up because you want them chunky in the muffin.

I have yet to try these with frozen bananas, but I’m sure it will work. Defrost them like you normally would, then drain any extra liquid and use the weight of the banana the recipe calls for.

These muffins are a great base for adding other ingredients, but I haven’t tried it yet. Along with the banana muffin, you could add some chopped nuts and spices.

You could also use blueberries instead of chocolate. If you’re using frozen berries, don’t let them thaw. To keep them from sinking, toss them in a little flour before adding them.

Chopped Chocolate Vs. Chocolate Chips For Muffins

I tried these with chocolate chips and chunks of chocolate, and the chunks were again better. When you use chopped chocolate, you get tasty bits of chocolate that melt inside the muffin. You can also find small pieces of chocolate in the muffin batter.

You can also use chocolate chips, which work just as well. Use what you have on hand, but if you have a bar of chocolate on hand, I highly recommend it! You can add chopped chocolate to the top of the muffins for a nice chocolate finish.

I also put raw sugar on the tops to give them a nice crunch. Both are optional, so if you want naked muffins, you can do what you want here.

Once the muffins are fully cool, you can keep them on the counter for 3–4 days in an airtight container lined with a paper towel. The paper towel will soak up the wetness and keep them from getting too wet.
